Gluten Free Casein Free


I wrote the other day about Fletcher's sudden milk-free diet. While his perfect behavior lasted almost a week, he seems to be getting back to his normal self again. It's been suggested that we go gluten-free as well since gluten is very similar to the protein casein found in milk. Close friends of ours just had to do this for their little girl. She has celiac disease. It has been quite an experience for them. What it came down to was that they either needed to spend a fortune on processed foods, or cook everything from scratch. She's trying to figure out a kind of substitute for AP flour right now. Since gluten clings to everything, she even has separate pans and dishes for her daughter's foods. I've heard fabulous things about what this does for behavior issues. Best of luck to you.

As you know I have Celiac Disease. Gluten-Free is a MUST for me. Even hand creams can set me off.

I am not 100% Casein free but am trying. Casein irritates me during my recovery and when I eventually heal it should no longer be a problem.

Anyways, Back to Gluten, would you like me to facebook you some resources?

@ Erin ~ Yes, please! And I will have lots of questions. One of my good friends has celiacs, so I know just a tiny bit about it, but not how it relates to kids and behavior at all.
