Blackbean Hummus for Meatless Monday


The black bean hummus I made for Meatless Monday turned out great. You can find the recipe over on the Green Phone Booth. I made little pita-type chips out of a multi-grain flat bread we had in the house. I just cut it up into squares, sprayed them with olive oil, sprinkled on some garlic salt and baked them in the oven until they were crispy.

This was a great lunch paired with a salad fresh from the garden.

Hmmmm...I haven't tasted it so this brings out the "kid" in me. Is "yuck" a four letter word? :)
