While I don't remember purchasing or planting collard green seeds this spring, this lovely plant begs to differ with my aging memory. At the risk of alienating my southern roots, I'm trying to avoid cooking them in bacon grease like most recipes suggest. Anyone care to share a different collard green recipe with me? As you can see, I have a lot of them to eat!

Child, puhlease, there just isn't any other way to cook collard greens, except in bacon grease!
Think spinach - try chopping them and assembling a casserole, ala spinach casserole. Think spinach dip. (These would involve the ever so fattening cream cheese, but eliminate the ever so fattening bacon.)

Braise them in veggie broth with garlic and onions and then add red pepper flakes. I love them this way.
